June 2016: Taiwanese Single Malt Whisky  

Kavalan was founded in 2005 and known as the first distillery built in Taiwan. The distillery features imported copper pot stills from Scotland, water sourced from the springs of Mountains of Taiwan, and several types of wood barrels to achieve specific flavor profiles. Kavalan was quick to become well-known, beating even traditional Scotch counterparts in competitions.

As for the distillation method, the whisky goes through double distillation, resulting in additional purity and leaving the still at a higher strength. For maturation, the temperature in Taiwan is higher than other areas where single malt whisky is traditionally produced. This results in the whisky extracting the flavors from the oak barrels at a faster rate. Thus, even at a younger age, Kavalan typically tastes more mature than other similarly aged, or even older, whiskies. Another interesting fact – Kavalan is named after the indigenous people who originally inhabited the northeastern corner of Taiwan.

Cocktail:

  • Name: Old Fashioned
  • Ingredients: Kavalan Single Malt, dark brown sugar, ice, bitters, orange and lemon peels
  • Recipe: Crush/mix the brown sugar together with two drops of bitters. Add a shot of Kavalan Single Malt, a few ice cubes, and stir. Add the mix to a chilled glass with ice. Garnish with one orange peel and one lemon peel.

  • Why this bottle is featured: This single malt whisky utilizes Ruby Port, Tawny Port and Vintage Port casks ( the “concert”) from Portugal to finish whiskies that were initially matured in American oak. Kavalan Concertmaster was named Best in Class at the 2011 International Wine & Spirit Competition.

  • Why this bottle is featured: This expression from the Taiwanese King Car distillery is the first to carry the name of the King Car Group instead of ‘Kavalan’ as their single malt whiskies have all be known as to date. Created as a well-rounded malt to represent the well-rounded Group, who operate in many industries, it is also bottled at a higher ABV of 46%.

    • Nose: Familiar rich dark fruit, marzipan and spice notes.
    • Palate: Mixed dark spices, vanilla and plum.

  • Why this bottle is featured: The Sherry Cask expression is matured in Oloroso sherry casks and also bottled at cask strength. This bottle is the exact same as the multi-award winning Kavalan Solist Sherry but diluted to 46% ABV using Kavalan Spring water.
