Westland Distillery first opened its doors in 2010 and is headquartered in Seattle’s SoDo neighborhood.  Its primary mission has been to create a distinctly American-style single malt that reflects the “distinct qualities of our time, place and culture in the Pacific Northwest.”\

Cocktail: Sherlock & Watson

2 oz Westland Single Malt
.5 oz Earl Grey syrup
.5 oz lemon juice
2 dashes cardamom bitters
Shake with ice and strain into coupe glass. Add lemon twist for garnish.

Bottle 1: Cask No. 711 – Selected Exclusively for Plumpjack Wine and Spirits

Proof: 108

Mash Bill: Malted barley (Washington Select Pale malt, Munich malt, Extra Special malt, Pale Chocolate malt, Brown malt) – aged 44 months in Cooper’s Reserve New American Oak.

Tasting Notes:

Nose: Chocolate, caramel, bananas foster, blackberry, fruity pebbles, fresh roasted coffee, malted chocolate balls

Palate: Roasted coffee and spice, chocolate, canned peaches, tobacco

Finish: Medium, heat that mellows

Mash Bill: Malted barley (Washington Select Pale malt, Munich malt, Extra Special malt, Pale Chocolate malt, Brown malt) – aged 54 months in Cooper’s Reserve New American oak.

Tasting Notes:

Nose: Candied cherry, espresso, fruit cocktail, creamy, overripe grapes, toffee

Palate: Coconut ice cream, dark chocolate, mocha, cherry pipe tobacco, Worcestershire sauce

Finish: Dry oak

Mash Bill: Malted barley (Washington Select Pale Malt) – Aged minimum of 37 months in 1st fill Oloroso Hogshead cask.

Nose: Fig, dried mango, almonds, pumpernickel, Werther’s original, floral

Palate: Raisin bread, grist, glazed croissant, herbal tea, red hots, grape nerds

Mash Bill: Malted barley (Westland’s Washington Select Pale malt, Munich malt, Extra Special malt, Pale Chocolate malt, Brown malt) – aged 58 months in Cooper’s Select New American Oak and finished in port cask.

Tasting Notes:

Nose: Chocolate covered cherries, fresh dill, pound cake, honey, prune, new leather, caramel, vanilla

Palate: Savory, maple candy, viscous, molasses, apple skins, blueberry cobbler

Finish: Dark chocolate, chili pepper

Why this bottle is featured: Distillery visit only. Bottle was hand poured in the tasting room.
